Cocoa Creme Fraiche Cupcakes

Made these last night. They are from Miette, a bakery in San Francisco that I’ve been dying to try. The cupcakes turned out pretty well. The creme fraiche gives it a nice almost sour/rich flavor that isn’t overpowering. Only weird thing was that they made 16 cupcakes and since most muffin pans hold 12, I had to use 2 pans. Good thing I have 2, and good thing Alex got me the second one. Also, I used paper baking cups since I didn’t have foil, and they took longer. I was wondering if the foil makes the cupcakes hotter, and therefore cooks quicker?
